
In the height of Guangzhou‘s summer, nothing beats gathering a few friends and heading to an elegant restaurant for a relaxed meal. This time I made a special trip to Yu Yue Heen, the Chinese restaurant at Four Seasons Hotel Guangzhou, and had the good fortune to be among the first to taste their new summer menu. With high expectations, I embarked on a seasonal culinary journey.
The Rice Bun with Pork Neck was a clever creation – soft, fragrant rice buns paired with crispy slices of pork neck, the meat savoury and never greasy, delivering a wonderfully rich texture in every bite. The Ginger Dressing Phoenix Tail followed the refreshing route that summer demands – crisp ingredients coated in a fragrant ginger dressing, cool and invigorating, just the thing to dispel the summer heat and awaken the palate.

The Stuffed Pigeon Leg with Mushrooms arrived with its skin lightly charred, the interior packed with savoury mushrooms. The heat allowed the mushroom fragrance to fully infuse the tender pigeon meat, which remained juicy and full of flavour. It carried the authentic fire of Cantonese roast meats without feeling too heavy – perfectly suited to the season.

The Lime Black Pepper Beef Short Rib brought a distinctly Southeast Asian flair – tender, juicy short rib paired with fresh lime, cutting through the richness of the black pepper. The interplay of sour, sweet, and spicy notes kept each bite refreshing and never cloying. The Steamed Marble Goby with Fresh Sichuan Pepper was the seafood highlight of the table – the fish flesh pearly white and delicate, the gentle numbing heat of fresh Sichuan pepper seeping into the meat through the steaming juices, locking in the natural sweetness of the fish while delivering a clean, vibrant flavour.
The Braised Tofu Skin with Baby Cabbage provided a gentle counterbalance to the meat-heavy dishes. The handcrafted tofu skin absorbed the sweet, clear broth of the vegetables, while the baby cabbage remained tender and crisp – light, savoury, and deeply comforting, the perfect foil to the richer courses.
The Passion Fruit Portuguese Egg Tart featured layer upon layer of flaky pastry that crumbled at the lightest touch, the filling infused with the tangy aroma of passion fruit – the fruit‘s acidity subtly tempering the traditional sweetness of the egg custard. The final course, the Perfumed Lemon and Ginger Yam Sweet Soup, was a true summer refresher – crisp ginger yam paired with the delicate fragrance of perfumed lemon, cool and gently sweet, each spoonful soothing away the last traces of summer heat.
