In Beijing’s dining landscape, Hakka-style breakfast is already a rarity — let alone a refined, 2026 Michelin-recognized presentation. At Zijin Mansion in Waldorf Astoria Beijing, the new “Shi Chao Ke Yun” (Morning Hakka Charm) menu brings the morning kitchen fires of Meizhou, Dapu, Fengshun and beyond to life with Michelin-level craftsmanship, unfolding a flavor-packed breakfast menu.

The menu opens by capturing the very essence of Fengshun Hakka rice rolls. Fengshun Bound Rice Rolls are made by steaming rice milk from high-quality rice into thin sheets, wrapping them with savory fillings, and steaming them once more. One bite delivers the purest morning taste memory of Fengshun locals. These seemingly simple rolls embody the Hakka philosophy of “rice as the core, flavor as the soul,” offering a gentle, warm start to the entire breakfast.

Unlike the soft, sticky texture of Cantonese-style siu mai, Meijiang Shaomai highlights thin wrappers and a springy, generous filling. The dough is rolled paper-thin, encasing a freshly seasoned meat filling. The balance between the meat’s richness and the delicate seasoning is perfect — a classic morning snack of the Meijiang region, every bite revealing the refined authenticity of Hakka small eats.

As the soulful soup of Hakka breakfast, Jiaoling Sanjidi Soup is the true “umami bearer.” With pork liver, lean pork, and pork intestines as its core, the broth is fresh without any gamey taste, rich but not greasy — perfectly cutting through the heartiness of the main carbs.

Pickled Noodles and Pickled Rice Noodles are the “soul carbs” of a Hakka breakfast. One bite, and you’re immersed in the cozy, smoky atmosphere of Hakka kitchens — an accurate recreation of Meizhou’s intangible cultural heritage flavors.

True to the Hakka philosophy of “eating by the season,” Hakka Water-Pickled Greens Stir-fried with Garlic Sprouts focuses on fresh, crisp, and refreshing notes. The water-pickled greens and garlic sprouts are quickly stir-fried over high heat, preserving the vegetables’ tender texture. The light yet flavorful seasoning suits the gentle needs of a morning meal while showcasing the Hakka knack for seasonal produce.

Poached Dapu Dried Vegetable Congee offers a mellow, comforting finish. Premium Dapu dried vegetables and rice are slowly simmered into a dense, creamy porridge. The savory essence of the dried vegetables mingles with the natural sweetness of the rice — smooth, warming to the stomach, and soothing to the heart.
