Earlier this year in Beijing, I had the privilege of tasting a four-hand menu jointly presented by the head chefs of the Chinese restaurants at The Peninsula Beijing and The Peninsula Hong Kong. Chef Lam Yuk Ming‘s creations from the Hong Kong side left a deep impression on me. So on this trip to Hong Kong, I made sure to set aside time for a visit to Spring Moon.

Perched high above the city, the restaurant completely defies the stereotypical image of sky-high dining as flashy and superficial. Its design, inspired by Roman opera and the wine estates of southern Italy, is both warm and textured.
